STEKA is a sauté pan designed to move between environments — from the kitchen stove to open fire.
The straight, higher sides allow for more than searing: simmering, frying, and building sauces directly in the pan. It is designed as a versatile tool — not specialized for one task, but capable across many.

The body and handle are cast in solid aluminum. There is no coating. The cooking surface is raw, allowing direct contact between material and ingredient.

Durability, in this context, is not only about strength. It is about staying relevant. An object that performs well, feels right to use, and continues to do so over time is less likely to be replaced. It becomes familiar. Trusted.

FEATURES

1. Flat-cast aluminum lid, inspired by the Japanese otoshibuta.

The underside features small raised points that help circulate moisture during cooking, creating a natural self-basting effect.
This allows for more even cooking when simmering, braising, or preparing sauces directly in the pan.

2. Cast aluminum handle, designed to be removable.

Attached with a simple screw construction, it can be easily replaced if needed — extending the lifespan of the product rather than limiting it.

3. Detachable cast aluminum handle.

Designed for a secure grip and balanced control, whether cooking on the stove or over open fire. The removable construction allows the pan to adapt to different uses — from compact storage to oven cooking.

4. Cast aluminum body, 5 mm thick.

The high, straight sides expand its use beyond searing — making it suitable for frying, simmering, braising, and building sauces. Dual side handles allow the pan to be used with or without the detachable handle.

5. Stainless steel screw for handle attachment.

Designed to be mounted and removed by hand,without tools. A simple solution that supports long-term use, maintenance, and adaptability.

PRODUCT CARE

Everyday cleaning:
Wash with a neutral detergent and a soft sponge.
Do not use melamine sponges, or steel wool.

Stubborn residue:
Add water to the pan and bring to a boil to loosen burnt bits.
If residue remains, use a soft sponge or similar item.

Not dishwasher safe. Doing so may cause discoloration and deterioration.
After use, do not leave it for an extended period. Let it cool, then wash it promptly.

WARRANTY

MOZAMBIQUE provides a 5-year warranty for products purchased directly through our website or from authorized sales partners. This warranty covers manufacturing defects and parts failures under normal use.

Paid repair services are also available indefinitely after the warranty period.* Paid repair services are provided to the extent that parts are available and repair technicians can be secured. If repairs cannot be accepted due to unavoidable circumstances, such as discontinuation of parts, we will notify you in advance.

If a defect covered by the warranty occurs, MOZAMBIQUE will provide an appropriate solution, including free replacement parts, repair instructions, or, where applicable, replacement of the entire product.

MOZAMBIQUE is designed to support long service life through repair and replacement rather than disposal. We recommend repair rather than replacement and have made it easy for customers to do so.

5mm Solid Pure Aluminum.

Aluminum is often associated with lightness. At a thickness of 5 mm, aluminum behaves differently. It stores heat in a way comparable to cast iron, while maintaining a lower overall weight. This makes it easier to handle, without compromising on cooking performance.

At the same time, aluminum has a high thermal conductivity. Heat spreads quickly and evenly across the surface, reducing hot spots and allowing for more controlled cooking.

By working with solid, uncoated material and a construction that allows for long-term use, the pan is made to be used, maintained, and kept. Surfaces will change. Traces of use will appear. These are not imperfections, but a natural continuation of the object’s life.

There is no coating. The cooking surface is raw, allowing direct contact between material and ingredient. This makes it possible to develop fond — the caramelized base that forms during cooking — and to build deeper flavors over time.

The pan requires attention. It responds to heat, to timing, to technique. It does not aim to make cooking effortless, but more engaging. What it offers in return is control — and the possibility to develop both flavor and skill over time.

This project began not with a product, but with a shared intention.

Rather than designing another piece of cookware, the aim was to rethink what such an object could be — how it could move between environments, and remain relevant over time.

Together with Mozambique, we explored the idea of creating tools that do not belong to a single context. Objects that can be used in the kitchen, but just as naturally over open fire. Not defined by one function, but shaped to work across many.

From our side, the process was rooted in Scandinavian design thinking. A focus on clarity, proportion, and reduction — where each element is considered, and nothing is added without purpose.

nôtori × STEKA

STEKA is designed not only for everyday cooking, but also for serious cooking where control, heat retention and versatility matter.

The body and handle are cast in solid aluminum. This provides the heat retention needed for proper searing, while remaining significantly lighter than traditional cast iron. The entire surface heats evenly and responds quickly to changes in temperature.

For this recipe development, we worked with chef Kohei Horiuchi, Grand Prix winner of RED U-35 2021, known as the RED EGG, who runs an auberge in the northern foothills of Mount Fuji.

The recipes were created to make full use of STEKA’s characteristics. One pan. A complete sequence of cooking. Searing, simmering and steaming — covering the situations in which STEKA is designed to perform.

In developing the recipes, the starting point was to understand the characteristics of the pan itself, and then consider how people would use it in real situations. The chef reflected each use case into the dishes: cooking at home, using the pan outdoors, making a dish that can be completed in one pan, and using the removable handle to place the pan in the oven for long cooking.

We asked chef Horiuchi about the background to the recipe development, the qualities of uncoated cookware, and how STEKA can be used in the home kitchen.

Each recipe is designed to show how one STEKA pan can move through different cooking methods and environments. The straight, higher sides allow for more than searing: simmering, frying, and building sauces directly in the pan. The lid helps retain steam inside the pan, making it suitable for steaming, braising and waterless cooking.

Designed with outdoor cooking in mind, the recipes can be completed with a single STEKA pan. Wine pairings are also included, so each dish can be enjoyed as a complete cooking and dining experience.

Ten pans a day.
A pace set by quality, not volume.

STEKA’s octagonal form is not only a design choice. It is a manufacturing challenge.

Unlike round cookware, the octagonal form requires additional precision in both casting and finishing. More edges. More processes. More judgement at every stage.

The pan is shaped through gravity die casting, CNC machining, hand finishing and specialist polishing. Although it is cast aluminium, the tolerances are kept as tight as possible. The lid and handle were prototyped repeatedly until the fit was right.

Each pan is made in a Japanese aluminium casting factory with over a century of experience. The process depends not only on machinery, but on long experience, intuition and delicate skill. Every piece is made with time, care and the involvement of skilled craftsmen.

At the current production capacity, output is limited to 10 pans per day.
